Espresso coffee is a complex beverage, consisting of four important elements: appearance, fragrance, flavour and aroma.
A good espresso has the following characteristics:
- Firm and lasting foam with a creamy structure and without bubbles, 2 to 3 millimetres in depth, hazelnut to brown in colour, with a possible reddish sheen
- A thick cream that remains on the edges of the cup
- A strong, fine, rich and lasting aroma, that long remains in the mouth after drinking
- A full, rounded and recognisable flavour
In order to achieve the perfect espresso, the following parameters should be followed:
- The ideal dose of Franck coffee is 7 grams
- Ideal grind setting
- Temperature between 88 and 92°C
- Pump pressure to 9 bar
- Optimum extraction time to the desired quantity of the espresso beverage
